TWO INGREDIENT JAPANESE SWEET POTATO WAFFLES

11:16 AM I started to love sweet potatoes very late. Sometimes they were too sweet for me, sometimes I didn't have any ideas what to do with them because of their very special flavor...sometimes I just sticked to my normal potatoes. Until I tried Japanese sweet potatoes. They have a more pink-ish colored skin and their inside looks as yellow as the inside of a normal potato - still it's a bit healthier and I have to say I like it best! 
I can only get this type of sweet potato at my go-to Asian supermarket and it's a bit more expensive, but I think it's worth it. 
I never buy 100s of sweet potatoes, I only buy a couple and therefore I also try to make the BEST dishes with them! 

Due to working out, I love making myself protein pancakes a lot...but one day, I was craving more than that - I wanted waffles! The whole big deal... with extra extra maple syrup. Yes, I wanted waffles, right now! I checked out my pantry and realized that my kitchen didn't have all the ingredients I needed. I googled a little bit and checked for recipes with less than 5 ingredients! Guess what I found? The best recipe for fluffy waffles and all you need is only 2 ingredients! 
I love this! 

I did it. 
I can't believe how easy that was. 
And even more exciting... this was so delicious! 
It's crazy that one can create waffles out of two ingredients only... do you want to see how?

JAPANESE SWEET POTATO WAFFLES 


YOU NEED 200g Japanese sweet potato + 2 eggs + 1/2 teaspoon cinnamon + 1 teaspoon Moon Juice's Lucuma 


1. Wash and peel the sweet potatoes. Cut them into little chunks and cook them in a pot of water until they are soft and ready. 
2. After the sweet potatoes are cooked, make sure to let them cool down a little bit. You can already start to mash them, so you can easily blend them with the eggs later. 
3. If you add the eggs while the potatoes are warm, you might end up having scrambled eggs...so really check if your potatoes are cold and then add both eggs. 
4. Stir the two ingredients to a nice and fluffy dough and add the cinnamon and Lucuma. (Lucuma has a sweet maple flavor which fits so perfectly to the sweet potato - if you don't have it, don't worry). 
5. You can also add special things you like such as chocolate chips, adaptogens, chia seeds, or nuts - it's up to you!
6. Now prepare your waffle iron and create two lovely sweet potato waffles! Make sure to let them get really crispy, because the texture is not as easy to be worked with as the usual waffle dough one is used to! If you put some coconut oil on your waffle iron, the waffles will also have a slight taste of coconut, which I love so much! 
7. Eat the waffles with some sweet and aromatic maple syrup and close your eyes! This is heaven!

You never have to worry about having 200 ingredients at home for creating sweet cravings! You have a wonderful and so healthy waffle that doesn't make you feel heavy or guilty afterwards...
